Food Rescue US - Northwest CT

Ms. Minck is a retired management consultant in the financial sector where she held many domestic and international executive leadership and program management roles in several of the top insurance companies (eg. Aetna, United Healthcare, Phoenix). For the last thirteen years of her career, she ran her own management consulting business in the Connecticut and New York areas.

After retirement, Kathy wanted to give back to her Litchfield Hills community. Her passion for fighting food insecurity led her to start a Food Rescue US program in Northwest CT in January 2016. She has served as the Site Director for the last 5  years, reducing food waste and food insecurity in 15 Northwest CT communities and serving 30 local pantries. She was the 2018 recipient of the Susan B. Anthony Community Service award and the 2019 Outstanding Business Outreach Award from Prime Time house for employing members for the seasonal farm gleaning program as well as decreasing food costs. In July 2021, she was also named as a community leader during COVID-19 by Litchfield Magazine. She also serves as an executive board member of the Women & Girls Fund (part of the Northwest Connecticut Community Foundation), raising money to support financial and career independence for local women and girls.

Ms. Minck resides in Litchfield with her husband Fred, a retired history and agriculture teacher and their three Australian Shepard dogs.
